According to the pictures in "Economic Insects of New Jersey" (which is available from your county extension service), you have the larval form of Mexican Bean Beatles. According to "New Jersey Vegetable Pest Control Recommendations" (same source) the remedies of choice are Rotenone Dust or Malathion. Both have 1 day wait before harvest. Beetles, larvae, and egg masses are listed as "easy to pick".
