The Right Thing to do is chuck out those silly wire ties they give you
and gaff down the sensor wires to the frame with duct tape.  Be sure
to leave a flex loop at the headset juncture so your bars can turn fully
right and left without stretching it.

Faking one of the things is easy.  Given that a sensor pulse is registered
when the two spring contacts are shorted, the following will work:

                                .--- to + sensor lead
                      1K      |/ c
Signal generator ---/\/\/\/---|   some random NPN transistor
                            b |\ e
                                |
Signal generator ground --------+--- to - sensor lead

But it's much more manly to rack up them miles on the road!!
