Stanford J. Shaw and Ezel Kural Shaw, "History of the Ottoman Empire and Modern Turkey", 2 vols, Cambridge University Press, London(1976-7). Lord Kinross, "The Ottoman Centuries", Jonathan Cape, London, (1977). For the modern period a standard book is: Bernard Lewis, The Emergence of Modern Turkey, Oxford University Press (1968). These will get you started.
