Howard W. Sams Publishing Co. puts out a series of very technical books
aimed at training and reference for electronic technicians working in
the television broadcasting industry.  These books provide a wealth of
technical detail about how television works between the camera and the
transmitter.  The ones that might be of interest are listed below:
