Hopefully, netland has the answers to these questions:

1. Can any of the new IBM graphics cards (Enhanced, Professional)
   be resident in the same box at the same time as a regular PC Color card?
   Or do they seek out and destroy each other?

2. What are the specs for the Professional card?

3. Are there any monitors, other than the IBM Enhanced monitor, that take
   advantage of the increased resolution of the EGA ?

4. I have seen some postings describing problems with the EGA on an
   AT running Xenix.  Are there problems under DOS 3.x also (on AT or PC)?

5. Is there any software (other than GEM) that takes advantage of the
   increased resolution?

6. What other cards exist that offer similar capabilities?

I can't speak for the Professional, but the EGA can be used as a mono
card along with the standard CGA card, or in CGA-emulation along with
the mono card.

Monochrome graphics are supported on IBM-type monochrome monitors.
This has the same 640 x 350 resolution as the Enhanced Graphics Adaptor
but, only 4 attributes (black, video, intense video, and blinking.)
The only available software which supports this mode, however, is
Microsoft Word 2.0 and Gem.

There are several Princeton monitors which are identically spec'ed to
the Enhanced Graphics DIsplay.

I have an EGA with mono monitor on an AT under DOS 3.0 and it works fine.
Some software (Sidekick earlier than version 1.5, IBM's own Professional
Debug Facility, probably more) was set for a CGA and plays around with
registers which don't exist (or have other effects) on the EGA, causing
the screen to mess up, and require a reboot.  However, the problems have
rapidly disappeared--I have Sidekick 1.5 now which works fine, and there
are patches available for the PDF.  Any software which tries to do 
centering of the video image will probably fail.  Trial and error is
unfortunately the only way to be sure, but I have managed to work around
any of the few problems which have arisen in the moth I've had the machine.
