            Does anyone remember the "remember"/ core dump scene in 
  ST II ?  Was it really there, or was this filmed for STIII??

I just saw STII last week at the Texas Union theater, and yes, Spock does
indeed place his fingers lightly upon the unconscious McCoy's face and 
whisper, "Remember."

The "core dump" sequence really was in STII.  It just happened so
fast that you didn't really have time to think about it until
later; there was too much else going on at the moment to stop and
ponder that action, and thus it tends to get lost in the "remembering."

I don't remember myself, but a friend of mine rented a tape of STII:
TWoK a day before seeing STIII, and he said this clip was indeed in
STII.  Of course, they may have put it in the tape when they made it...

Yup, it was there.  The only people who might not have seen it are those
who were involved in the pre-release screenings.  It was added when
Harve Bennett (co-writer/producer) decided (from the reactions to the
screenings) that he wanted to leave room to bring Spock back in the next
"episode".  They also added the shot of the casket having landed on the
Geesis planet, and some of the dialogue/monologue at the end (McCoy:
"He's not really dead, as long as we remember him," Kirk: "I know I
must return...", and Kirk: "Spock said 'There are always
possibilities.'").

I actually noticed the sequence the second time I saw STII (before I
saw STIII) and it bewildered me since I could not make sense of it
at that time.  I just passed it off as one of those things which was
to tie in with something which was left on the cutting room floor.
Little did I realize...

The greater the complexity of the mind, The greater the need for the
simplecity of play.

Some people may get confused from the fact that the "Remember..." sequence
was not in the novelization.  (I wonder how the author felt when she noticed
that?  But, as was pointed out, the scene might(was?) put in later to appease
those who wanted an Out.)

Also remember that when filming was started on STII, Nimoy still wanted out
of the series (because of the bad taste in the mouth from STI).  It wasn't
until the filming was well underway for STII that he changed his mind.
Since the shooting script must have been given to Vonda McIntyre before
filming started (in order for it to be released at the same time as the film),
she was not able to include it.  In the novelisation of STIII all that is
mentioned (by my recollection) is that Spock had melded with McCoy before
going into the chamber.
