Penda Uhura and Walter Sulu are the established names used in Trek fan fiction.
I don't know who originated either one (though for some reason I think George
Takai picked Walter), but I have seen both in numerous fanzines.  The pro
writers ignored, or most likely didn't know about, this convention.  Since the
pro novels are more widely known, the names they pick are probably more likely
to turn up in a movie, if they ever want first names for these characters.
Personally, I've read better stories in fanzines than most of the Trek novels.
