We know of at least three other classes of ships:

The Light Cruiser (Reliant)
The New Scout (Grissom)

Third Class Deutronic Fuel Carrier (Kobyash Maru [sp.?])

P.S. This does not include non-StarFleet ships such as the courier Spock
arrived in in ST1:TMP, or the various frighters and other civilian ships
that are mentioned here and there.
