In my own experience, I haven't found that any bottle conditioned beers (i.e., those with yeast in the bottom) have bitter tastes in the sediment. Finding a problem in a Weissbier is suspicious, since the Weissbiers bottled with yeast are intended to be drunk to the dregs. Consider the possibility that the bottle was mishandled somewhere along its multi-thousand kilometer journey. In any case, IT WON'T HURT YOU. It's only brewer's yeast, for heaven's sake - the same thing that some people take for health reasons (or obsessions:-) Try it. Homebrew yeast is ok as long as you're getting the bottle yeast and not the gruk (or technically, trub) from the primary stage of fermentation - but you won't get that in any drinkable homebrew anyway. I'm going to go right out and get some Weissbier to check that bitterness problem. It's time for a beer anyway. -- ...Are you making this up as you go along?
