I found a very good book at the USENIX at Denver last week. This book fills the hole where a "good" Text Processing Guide should be in standard UNIX documentation. It covers nroff and (di)troff, pic, eqn, tbl, and a whole lot more. It's not too dry and contains lots of examples.
