I remember doing a much simplier proof of the Borsok-Ulam theorem as an undergraduate. The text we used was "A Primer of Real Functions" by Ralph P. Boas, Jr. The argument is based on stuff given on page 85, although it is incomplete there, and I've forgotten some of the details. (By the way, the title "primer" is really a misnomer. Next to Riesz & Sz. Nagy's Functional Analysis, this was the most difficult math text I saw as an undergraduate). (As a graduate student I took up Computer Science, so I never did get a chance to see if the texts got any more obscure).
